Ingredients:

  • 1 cup of cauliflower rice
  • 300g of lean ground beef
  • 1 medium onion, chopped
  • 2 cloves of garlic, minced
  • 1 bell pepper, diced
  • 1 teaspoon of cumin
  • 1 teaspoon of paprika
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons of olive oil
  • 1 cup of vegetable broth
  • Fresh parsley for garnish

Instructions:

  • Heat olive oil in a large skillet over medium heat.
  • Add chopped onion and minced garlic, sauté until translucent.
  • Add the ground beef, breaking it apart with a spatula, and cook until browned.
  • Stir in the diced bell pepper, cumin, paprika, salt, and pepper, cooking for another 5 minutes.
  • Pour in the vegetable broth and bring to a simmer.
  • Add the cauliflower rice, mixing well, and cook for an additional 10 minutes until the cauliflower is tender.
  • Remove from heat and garnish with fresh parsley before serving.
