Ingredients:

  • 4 medium zucchinis (about 800g)
  • 200g cherry tomatoes
  • 100g fresh basil leaves
  • 50g pine nuts
  • 50g grated Parmesan cheese
  • 100ml olive oil
  • 2 cloves garlic
  • Salt to taste
  • Pepper to taste
  • 200g grilled chicken breast (optional)

Kitchen Tools Needed:

  • Spiralizer
  • Food processor
  • Skillet
  • Cutting board
  • Knife

Instructions:

  • Spiralize the zucchinis using a spiralizer to create zucchini noodles (zoodles).
  • In a food processor, combine basil leaves, pine nuts, garlic, and Parmesan cheese. Pulse until finely chopped.
  • With the food processor running, slowly drizzle in the olive oil until the mixture is smooth. Season with salt and pepper to taste.
  • In a large skillet, heat a little olive oil over medium heat. Add the zucchini noodles and sauté for about 2-3 minutes until just tender.
  • If using, slice the grilled chicken breast and add it to the skillet to warm through.
  • Add the pesto to the skillet and toss everything together until the zoodles are well coated.
  • Serve immediately, garnished with cherry tomatoes and additional Parmesan if desired.
