Ingredients:
- 4 medium zucchinis (about 800g)
- 200g cherry tomatoes
- 100g fresh basil leaves
- 50g pine nuts
- 50g grated Parmesan cheese
- 100ml olive oil
- 2 cloves garlic
- Salt to taste
- Pepper to taste
- 200g grilled chicken breast (optional)
Kitchen Tools Needed:
- Spiralizer
- Food processor
- Skillet
- Cutting board
- Knife
Instructions:
- Spiralize the zucchinis using a spiralizer to create zucchini noodles (zoodles).
- In a food processor, combine basil leaves, pine nuts, garlic, and Parmesan cheese. Pulse until finely chopped.
- With the food processor running, slowly drizzle in the olive oil until the mixture is smooth. Season with salt and pepper to taste.
- In a large skillet, heat a little olive oil over medium heat. Add the zucchini noodles and sauté for about 2-3 minutes until just tender.
- If using, slice the grilled chicken breast and add it to the skillet to warm through.
- Add the pesto to the skillet and toss everything together until the zoodles are well coated.
- Serve immediately, garnished with cherry tomatoes and additional Parmesan if desired.
